Dehydrator Diaries: Sun Fruit

I had an abundance of gorgeous organic oranges.  I often drop a few dried orange peels in my tea blends for flavor, so I like to have plenty on hand.  I add a bit of the actual orange instead of just the rind, but this does add to the D time.  About 24 hours at 145 degrees.

While chopping them I came up with a lovely idea for Christmas presents, but I'll share that later...someone remind me?

Even after all those lovely orange rinds I still had plenty of oranges.  I had set some cashews to soak to make some creamy kale chips when I thought oranges + cashews + kale = yummy!


Crooked Sun Fruit Kale

1 large head of kale (rinsed and torn into chip size pieces)
2 cups raw cashews (soaked at least 2 hours)
6 medjool dates (pitted)
Juice of 5-6 oranges
Zest of 2 oranges
dash of sea salt
Blend all ingredients (except the kale) in a blender on high until completely smooth.  Then pour it over the kale and mix it in (with your hands...messy!) to make sure each kale piece is coated.  Lay onto mesh screens and dehydrate at 115 degrees for 12 hours, or overnight.



It's really good!  Slightly sweet and a bit salty...we love them!
